Method
Blend & Heat – Combine TMP, gochujang, sugar, soy, vinegar, ginger, and garlic. Bring to 85 °C while stirring.
Finish – Off heat, whisk in sesame oil, lime zest, and xanthan (if using).
Pack – Hot-fill into sterilised glass bottles; invert for 2 minutes to ensure cap sterility.
Cool – Rapid chill to < 25 °C to lock colour and flavour.
Shelf life: 12 months ambient (thanks, natural acidity!)
