Recipe for Alphonso Mango Cheesecake(for one 7-inch cheesecake)
Base:
Digestive biscuits – 150g
Melted butter – 70g
Filling:
Cream cheese – 400g (full-fat, room temp)
Whipping cream (35% fat) – 200ml
Alphonso Mango Puree (SKOT INDIA) – 250g
Gelatin – 10g (or 2 tsp agar agar for veg version)
Warm water – 50ml (for gelatin bloom)
Sugar – 60g (adjust to taste)
Topping (optional):
Alphonso Mango Puree – 100g
Gelatin – 3g + 20ml warm water (for glaze)
Method:
1. Prepare the base
Crush biscuits into fine crumbs.
Mix with melted butter until sand-like texture.
Press into a springform pan base, flatten, and chill for 15–20 mins.
2. Make the filling
Bloom gelatin in warm water.
Whip cream cheese until smooth. Add sugar and SKOT INDIA Alphonso Mango Puree.
Whip the cream separately to soft peaks.
Gently fold cream into mango-cheese mix.
Add bloomed gelatin (slightly cooled) and mix well.
3. Assemble & Chill
Pour filling onto the chilled base.
Smooth top. Refrigerate 6–8 hours or overnight.
4. (Optional) Mango Glaze
Mix mango puree + bloomed gelatin.
Pour gently over set cheesecake and chill again until firm.
5. Garnish & Serve
Top with mango cubes, mint, or edible flowers. Serve chilled.
