Recipe for Alphonso Mango Cheesecake(for one 7-inch cheesecake)


Base:

  • Digestive biscuits – 150g

  • Melted butter – 70g


Filling:

  • Cream cheese – 400g (full-fat, room temp)

  • Whipping cream (35% fat) – 200ml

  • Alphonso Mango Puree (SKOT INDIA) – 250g

  • Gelatin – 10g (or 2 tsp agar agar for veg version)

  • Warm water – 50ml (for gelatin bloom)

  • Sugar – 60g (adjust to taste)


Topping (optional):

  • Alphonso Mango Puree – 100g

  • Gelatin – 3g + 20ml warm water (for glaze)


Method:


1. Prepare the base

  • Crush biscuits into fine crumbs.

  • Mix with melted butter until sand-like texture.

  • Press into a springform pan base, flatten, and chill for 15–20 mins.


2. Make the filling

  • Bloom gelatin in warm water.

  • Whip cream cheese until smooth. Add sugar and SKOT INDIA Alphonso Mango Puree.

  • Whip the cream separately to soft peaks.

  • Gently fold cream into mango-cheese mix.

  • Add bloomed gelatin (slightly cooled) and mix well.


3. Assemble & Chill

  • Pour filling onto the chilled base.

  • Smooth top. Refrigerate 6–8 hours or overnight.


4. (Optional) Mango Glaze

  • Mix mango puree + bloomed gelatin.

  • Pour gently over set cheesecake and chill again until firm.


5. Garnish & Serve

Top with mango cubes, mint, or edible flowers. Serve chilled.
